A simple but delicious recipe to satisfy your squash cravings! Filled with flavor, this recipe is high in vitamins A and C, potassium, and antioxidants! You can blend together your leftovers (if you have any!) to create a delicious soup for those cold winter days.
Ingredients
- 1 medium butternut squash, peeled and cut into cubes/chunks
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp black pepper
- 1 tsp turmeric
- 1 tsp cumin
- 1 cup medium white or yellow onion, halved and thinly sliced
- 1 cup red bell pepper, seeded and sliced
- ¼ cup pine nuts
- ⅓ cup cilantro
Instructions
- Preheat the oven to 400
- In a large bowl, toss squash and onions and oil together
- Add salt, garlic powder, chili powder, black pepper, turmeric and cumin and toss again
- Spread mixture onto large baking sheet and roast, tossing once halfway through, for 45 mins
- Remove from oven and garnish with pine nuts (or any nuts of your choice) and cilantro!
