Hearty Butternut squash

A simple but delicious recipe to satisfy your squash cravings! Filled with flavor, this recipe is high in vitamins A and C, potassium, and antioxidants! You can blend together your leftovers (if you have any!) to create a delicious soup for those cold winter days.

Ingredients

  • 1 medium butternut squash, peeled and cut into cubes/chunks
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 cup medium white or yellow onion, halved and thinly sliced
  • 1 cup red bell pepper, seeded and sliced
  • ¼ cup pine nuts
  • ⅓ cup cilantro

Instructions

  1. Preheat the oven to 400
  2. In a large bowl, toss squash and onions and oil together
  3. Add salt, garlic powder, chili powder, black pepper, turmeric and cumin and toss again
  4. Spread mixture onto large baking sheet and roast, tossing once halfway through, for 45 mins
  5. Remove from oven and garnish with pine nuts (or any nuts of your choice) and cilantro!
